okay so i have been trying a lot of main dishes lately, but in an effort to cook more veggies and good-for-you things i tried a new spinach recipe. it’s one of my favorites!
1 bunch of spinach (i used the kind from the bag, ready to serve in a salad!)
1/4 cup low fat cream cheese
1 tbsp lemon juice
sea salt to season
1/8 cup boiling water
add the boiling water to a skillet on med heat, and put the spinach in. cover and let cook for about 3 minutes. note: use like 4 or 5 times more spinach than you think you’ll need. it cooks way down!
when the spinach is tender, add the lemon juice and cream cheese to the skillet, and stir carefully, until the cream cheese is melted.
serve immediatley, while warm.
we had this with italian baked chicken covered in texas caviar and couscous. it was a citrusy themed meal and was fabulous!
